Canvas started in 2021 as a two-person coffee company reaching the same point from opposite ends. Genavieve Gilbert is a painter who curates the gallery and whose work turns up on the retail bean bags; Arin Gilbert left a career in tech to learn to roast. Coffee and art get treated as one craft here rather than a theme bolted onto a cafe.
Arin roasts offsite on a compact Diedrich, working green coffees from importers like Royal New York and Genuine Origin into everything from classic, chocolatey profiles to brighter, more acidic cups, with guest roasters rotating through alongside the house lineup. The Stone Avenue room, just north of downtown, is bright and spare: a white marble bar, a La Marzocco pulling shots under two tall windows, and walls handed over to quarterly shows by local artists. A smaller Canvas coffee cart runs a few blocks away inside the Greenville Center for Creative Arts.
It reads less like a themed cafe than a working gallery that takes its coffee seriously, the sort of room people settle into for a while instead of grabbing and going.
