Vietnamese food finally has an address on downtown Greenville's Main Street, and it belongs to Cần Thơ, which opened in the summer of 2026 in the suite beside Carolina Ale House. The name comes from a river city in the Mekong Delta, and that southern-Vietnamese origin shapes the menu.
Southern Vietnam is known less for the northern-style phở most Americans picture and more for hủ tiếu, its pork-and-seafood noodle soup, and that point of view runs through the cooking. Phở is here, alongside dishes like lúc lắc, the shaken beef that still carries the fingerprint of France's long presence in the country. Behind it are Lisa and Charlie Doan, who ran restaurants in Minnesota, meant to stay retired, and got talked back into it by Cheng Yap of Sushi Murasaki once he noted that no one downtown was cooking this food. Both reached the States as refugees after the war and came to Greenville by way of Louisiana, and the family recipes came with them. A depiction of Cần Thơ's Cái Răng floating market decorates the room.
The space was built for sharing, with oversized tables set out so a whole extended family can pull up together, and takeout covers the nights you would rather eat at home. It is still early days, but the first diners keep singling out the crispy fried egg rolls and the house fried rice, and those are the two to start with.
